Mulukhiyah

Ingredients

Servings:
4
  • 800 g Mulukhiyah
  • 1 chopped Onion
  • 300 g Beef
  • 1 tsp Salt
  • 1 Litre Water
  • 1 Garlic Clove
  • 1 cup Olive Oil

Instructions

9 steps · ~55 minutes total

  1. Step 1

Saute the onions in the 3-4 tablespoons olive oil

    8 minutes
Make sure your pan is hot before adding oil — this prevents sticking.
  2. Step 2

Add the beef cubes or the chicken cutlets, sear for 3-4 min on each side

    5 minutes
Keep your fingers curled under (claw grip) for safety when cutting.
  3. Step 3

Add 1 liter of water or just enough to cover the meat

    3 minutes
  4. Step 4

Cook over medium heat until the meat is done (I usually do this in the pressure cooker and press them for 5 min)

    5 minutes
  5. Step 5

Add the frozen mulukhyia and stir until it thaws completely and then comes to a boil

    10 minutes
Use a large pot to prevent boiling over. Add salt to the water for extra flavor.
  6. Step 6

In another pan add the 1/4 to 1/2 cup of olive oil and the cloves of garlic and cook over medium low heat until you can smell the garlic (don’t brown it, it will become bitter)

    5 minutes
Don't overcrowd the pan — cook in batches for a better sear.
  7. Step 7

Add the oil and garlic to the mulukhyia and lower the heat and simmer for 5-10 minutes Add salt to taste

    15 minutes
Keep the heat low — gentle bubbles, not a rolling boil.
  8. Step 8

Serve with a generous amount of lemon juice.

    2 minutes
Warm your serving plates in the oven briefly for a restaurant-quality touch.
  9. Step 9

You can serve it with some short grain rice or some pita bread

    2 minutes
Warm your serving plates in the oven briefly for a restaurant-quality touch.
